I sometimes suggest a range of sweetness in my scone recipes, as many of my readers have a more "American" palate, but I can't stand the idea of seriously suggesting that all people put a cup of sugar in a scone recipe requiring, say, 3 cups of flour. :)Veehttps://www.blogger.com/profile/08746905336892298900noreply@blogger.comtag:blogger.com,1999:blog-2717383919476589077.post-34850905801986619492011-03-08T14:18:37.160-05:002011-03-08T14:18:37.160-05:00I have one more tip, which not everyone may like. ...I have one more tip, which not everyone may like. I may not have the same tastes as everyone else, but when making scones, if I find a default recipe that is from the United States, I cut the sugar in half. I think Americans have a sweet tooth. Sometimes I've even cut the sugar in half while baking and still had it be too sweet for my tastes!Alex Zorachhttps://www.blogger.com/profile/08335878680429494039noreply@blogger.comtag:blogger.com,1999:blog-2717383919476589077.post-75281074541157761292010-05-26T18:40:32.045-04:002010-05-26T18:40:32.045-04:00Hi, Nigel! They're ideal with matcha and other Japanese green teas, but I could maybe see pairing some of them with a Darjeeling first flush, a green Taiwanese oolong or a Nilgiri, too.

You can get them outside of Japan. I've been to a wagashi shop in London. They also exist in San Francisco, NYC and elsewhere.

Some cities' local Japanese or international nonprofits offer wagashi making workshops. Also, most health food stores have mochi, which you can use to make simple wagashi at home.Veehttps://www.blogger.com/profile/08746905336892298900noreply@blogger.comtag:blogger.com,1999:blog-2717383919476589077.post-77517476949288083692010-05-26T18:06:52.019-04:002010-05-26T18:06:52.019-04:00If you get a chance, I would love to hear your imp...If you get a chance, I would love to hear your impression of wagashi and what teas you like with them. Now I eat seafood and chicken on occasion, but my diet skews heavily toward veg.

I would not recommend Jade Garden to vegans because I find that old-school, non-veg/non-Buddhist Chinese restaurants are sometimes notorious for cross-contaminating "vegetarian" and "vegan" foods with sauces and even with pieces of meat. However, for vegetarians who aren't really strict about sauces, etc., there are some great options -- just get made-to-order dishes instead of the foods from the carts.

Evan -- Thanks for the recommendation!
